Sauce using fresh tomatoes from the garden
My son Jon planted a few tomatoes outside his office, and it’s turned into quite the crop. The other day he made sauce using the fresh tomatoes from the garden, and it was a big hit. Here is Jon’s easy fresh tomato sauce recipe:
3,4,5 fresh large sized tomatoes from your garden – depending on how much sauce you want. Feel free to mix plum tomatoes and regular ones. Riper is better
Chopped onion, chopped green, red and or italian pepper, crushed garlic
olive oil, salt and pepper, italian seasoning
brown sugar
Peel and seed tomatoes and put aside
Heat some olive oil in a deep pot. When it gets war, add onion and peppers (chopped pretty fine). Salt them a little and cook on medium until they soften. Add the garlic and cook for a minute or so. Add the tomatoes and utilian seasoning and cook on low for as long as you have – the sauce is great at whatever stage of cooked. Throw in some brown sugar (not much…to taste) and season as you like.
